Whole raw eggs are naturally very low in sugar — about 0.37 g per 100 g. Egg whites contain a little more (around 0.71 g per 100 g) because the small amount of glucose in an egg sits mainly in the albumen, while yolks come in at roughly 0.56 g per 100 g. The sugar values come from standard food-composition databases, but real eggs vary. A large egg can weigh from 50 g to over 60 g depending on grade and hen, and scrambled eggs differ from kitchen to kitchen because the amount of butter, milk, or cream changes both the total weight and the sugar content.
